Sourdough peach burrata toast with prosciutto and mint.

Recipe

Serves One

Ingredients

  • 2 sourdough slices

  • 1 tbsp fig jam

  • 1 peach, thinly sliced

  • 2-4 oz burrata (one full or 1/2 ball from 8 oz container, to taste)

  • 2-3 slices prosciutto 

  • 4 mint leaves, chopped

  • Squeeze of lemon juice

  • Drizzle of honey

  • Flaky sea salt

Directions

*Prep ingredients before toasting bread for quick assembly.*

  1. Thinly slice the peach, cut burrata in half, pull prosciutto apart into pieces, and chop basil. Set all ingredients aside, separated.

  2. Toast bread until crispy (the crispier the better to hold structure - easier to eat).

  3. Spread a thin layer of fig jam over toast. 

  4. Lay half the prosciutto over the toast, creating a barrier to keep the burrata from making the bread soggy (important step!).

  5. Pile on burrata, evenly spreading out the cheese. Add freshly cracked pepper if desired.

  6. Add remaining prosciutto pieces on top of burrata.

  7. Arrange peach slices in a layer across the top, putting any leftover fruit on the side.

  8. Top with a light drizzle of honey and a sprinkle of salt before topping with mint leaves. 

  9. Finish with a squeeze of lemon juice (don’t forget to add some juice to the peaches on the side, too).

Pair with some Manchego cheese slices, almonds or any other lil bits you might want on the side 🍑🥂
